Not content with establishing one of the World’s leading whisky bars, brothers Phil and Simon Thompson, upped their ambitions and started making their own whisky and gin at Dornoch Distillery in the Highlands. They also have a side-hustle as expert blenders and bottlers.
With SRV5 Blended Malt, the team aimed to create a blend that whisky geeks like themselves would enjoy, that is easily mixed and at an accessible price. The name SRV5 is named for the bond's location of Station Road and the vat number the spirit rests in.
A selection of North Highland, Islay and Speyside Single Malts aged over 8 years old were carefully selected to create a complex vatted malt which is bright and fresh with a slightly waxy mouthfeel and gentle smoky balance.

Tasting notes
Galia melon, lemongrass, apricot, cucumber aromatics, green peppercorns in brine, green apples, lime cordial, grapefruit bitters, green peppers with a touch of coastal peat. The palate is subtly waxy and suggests lemon oil, grapefruit juice, capers, lemongrass with thyme with some subtle smoke on the finish.
